Ingredients:

1 lb shrimp

4 tsp Chile powder

2-3 tsp sugar

2 Red peppers, diced

3 cloves garlic, minced

2 TBS fresh ginger, grated or 2 tsp ground

2 scallions, diced

12-16 oz frozen corn

3 TBS vinegar

Olive oil

Directions:

  1. Season shrimp with Chile powder & sugar. Set aside.
  2. Heat 1 TBS oil in pan. Add scallions, red pepper, garlic and ginger. Sauté 2-3 minutes. Add the corn, vinegar, salt & pepper, to taste. Cook another 2-3 minutes. Transfer corn mixture to bowl.
  3. In same pan, heat 1 tsp olive oil. Add shimp, cook 1-2 minutes, flip shrimp & cook 1-2 minutes more.
  4. Serve shrimp on top of corn blend.
