Ingredients:

1 lb boneless pork loin, cut in 1-inch cubes

1 TBS oil

2 cloves garlic, minced

1/2 cup Panko

Sauce:

1 1/2 cup low sodium chicken broth

1/3 cup sugar

1/3 cup red wine vinegar

2 TBS cornstarch

1 TBS soy sauce

1 TBS oil

1 cup broccoli flowerettes

1 cup carrots, thinly sliced

1 red pepper, cut in 1-inch squares

1 8-oz can pineapple chunks, drained


Directions:

  1. Preheat oven 375 degrees.
  2. Combine oil and garlic. Add to pork and toss to coat.
  3. Put panko in shallow dish. Add pork to panko and toss to coat.
  4. Arrange pork on ungreased baking sheet. Cook 10-12 minutes.
  5. Combine sauce ingredients and set aside.
  6. Heat oil in large skillet. Add carrots and broccoli. Cook 4-5 minutes. Add red pepper and cook 3 minutes more. Remove vegetables from skillet,
  7. Stir the sauce and add to skillet. Cook and stir until thickened and bubbly. Cook 2 more minutes.
  8. Add chicken, vegetables and pineapple to sauce. Cook 1-2 minutes,
  9. Serve over rice
