Ingredients:

4 TBS lime juice

1 TBS oil

2 tsp chili powder

2 tsp cumin

1/4 tsp salt

1 tsp garlic powder

1 15-oz can chickpea/garbanzo beans, drained and rinsed

1 head cauliflower cut in bites size pieces

1 cup sour cream

1/4 cup cilantro, finely chopped

1 TBS sriracha

8 corn tortillas

To top: shredded cabbage, shredded carrots, cheese

Directions:

  1. Preheat Air fryer 390 degrees
  2. Combine 2 TBS lime juice, oil, chili powder, cumin, salt, and garlic powder. Add chickpeas & cauliflower. Toss to coat. Air fryer mixture for 20-minutes, stirring half way through. Cook additionally if you prefer it to be crispier.
  3. Combine, sour cream, cilantro, sriracha and remaining 2 TBS lime juice.
  4. Spoon cauliflower mix on tortilla, top with sauce and other toppers.
