Vitality Plus-Sausage & Peppers on Farro
Ingredients:
1 lb Chicken sausage, cut in 1 inch pieces
1 TBS oil
4 cloves garlic, minced
2 colored peppers, cut into strips
1 bunch parsley, finely chopped
2 cans Italian style tomatoes
1/2 cup Farro
Parmesan cheese to serve
Directions:
- Bring 1 1/2 cup water to boil. Add farro & lower to simmer. Cook 20-35 minutes depending on desired firmness. Make extra to have for later in the week!
- Heat oil in large skillet. Add sausage, garlic & peppers. Sauté until sausage is brown and peppers are tender.
- Add parley and tomatoes. Let cook 5-8 minutes more until sausage is cooked through.
- Serve sausage mixture over farro, top with Parmesan cheese
