I’m seeing more bars treat the “between round” drink with the same care as the cocktail list — bitter sodas, NA vermouth spritzes, chilled teas with citrus peel. Alternating drinks used to feel like damage control; now it just feels like pacing a long dinner so you can still taste the last course.
