Restaurants still move like cruise ships compared to grocery shelves. Whole Foods calling out things like bitter flavors, beans, and terroir-driven pantry staples for 2027 feels right to me because retail can test a weird new ingredient in one endcap, while a restaurant has to train cooks, print menus, and hope people order it twice.
